From what I've read, Ammonia is the is more toxic than nitrites are, and nitrites more toxic than nitrates...

*adds this as another reason not to trust LFS people*

Yeah, Ammonia is definitely the most toxic of the three. Fish cannot handle as many ppm of ammonia as they can of nitrites. On the other hand, both are toxic enough that the difference of tolerable levels isn't that big. Still, Ammonia definitely does take the cake.

If you think about it, look at the order of cycling ammonia/nitrites/nitrates. All three are toxic yet nitrate is more like air pollution in Los Angeles. You can breath it, yet it is still not healthy.

This didn't prove itself right for me. when i cycled my first 10 gallon tank i added 2 zebra danios. they were fine in ammonia up to around 2ppm. then when nitrITE went to 0.25 they were dead. so it really doesn't make sense.

Ammonia is more toxic but fish tend to die in the nitrite spike. This is because They are already stressed by the ammonia in the water and all of a sudden a new poisin is added. Their bodies can't handle the extra toxin. It is also because the ammonia and nitrite will have a cumulative effect because the ammonia is still present in the water.
I can't think of some creative metaphore but I'll try to latter.
